咖啡的衝煮方式有很多種，而關於手衝咖啡就有N種方法進行沖泡。你的手衝咖啡好喝嗎？你適合用什麼姿勢衝手衝呢？
攪拌法
攪拌法的橫空出世，得益於2012年的WBC（世界咖啡師大賽），當年的冠軍咖啡師Matt Perger在使用了這個方法後，在歐美和澳洲火速流行了起來。
攪拌法需要把咖啡粉磨得非常細，然後注入50g左右的水均勻攪拌， 30秒後再次注水，直到2分鐘時完成注水。而深度烘焙的豆子需悶蒸15秒後再次注水，1分鐘30秒時完成注水。
點滴法
顧名思義，就是用滴水形式對咖啡粉進行沖泡。操作過程和沙漏一樣，一點一滴地滴落在咖啡粉中，萃取過程精緻耗時，簡直是處女座的最愛。
先用水滴一點一滴地將咖啡粉預先溼潤，當滴了差不多1/3時，便開始注水，當咖啡粉的水位到達粉層時即刻停止，再等水位下降到一半時，再次注水。
優點：咖啡的甘甜味容易突出，也能避免酸澀味和苦味。
松屋法
松屋法同樣來源於日本，誕生原因只是爲了萃取出咖啡中的美味成分，卻意外演變成了一種受歡迎的衝煮方式。
首先，用勺子在咖啡粉正中間挖一個坑，深度大約距離粉面 30cm，然後從中間開始注水，直到咖啡液滴落。隨後，注水方式改爲往外畫圈，把咖啡粉全部澆溼，再蓋上蓋子悶蒸。3分鐘後，再次開始均勻不間斷注水，當咖啡液到達咖啡壺一半位置即刻停止注水，這時再加入熱水稀釋便可。
火山衝
火山衝手法最早來源於日本。其原理是，利用咖啡豆中含有的二氧化碳，經過熱水多次悶蒸，使得咖啡粉鼓得像火山噴發一樣。
由於深烘豆含有更多二氧化碳，所以更適合這種衝煮方法。火山衝手法大多使用法蘭絨和V60，因爲中間的粉層較厚，所以正中間的位置用來注水。
學院派衝煮法
手衝咖啡最常用的衝煮方式就是學院派衝煮法。由於衝煮方法簡單，也是大多數咖啡愛好者的首選法之一。操作十分適合入門級選手，只需從咖啡粉中心往外注水悶蒸，等到粉層塌陷後，再次由裏到外均勻注水即可。
其實一杯咖啡好不好，並沒有固定的標準，好不好喝，自己喜歡就行。就像那句話怎麼說的來着？蘿蔔青菜各有所愛，穿衣戴帽各有所好嘛~
