排除降低成本等商業目的,單品咖啡本身就可以表現出天然的清香、柔和與甘香。但是大部分的咖啡正因爲擁有自身的特別風味,恰恰又會在其它方面不足。如缺乏特殊的風味、缺乏深度、不夠力度或某種味道過於強烈。爲了彌補這些不足,把數種具備不同特性的咖啡豆拼配起來,可以創造出更理想的的口感和更優美的風味。
咖啡拼配就好像畫家在調色板上調和出迷人的色彩一樣,拼配師也能用咖啡豆調和出誘人的味道。所以說拼配是一門藝術絲毫不爲過,作爲藝術家的拼配師不僅僅需要豐富的經驗和靈感,更要通過精細的科學計算。
對於一個優秀的咖啡拼配師,咖啡豆就像手上的萬花筒一樣,變幻出風情萬種的咖啡,不論是對創造者,還是對享用者,都是一種非常生動美妙的感受。這就是拼配藝術的魅力。單品是淡雅的水墨畫,拼配是濃重亮麗的油畫。對一個創造者來說,拼配的可愛在於手中的畫筆可以發揮更多的自主權。在拼配前應該清楚以下幾點:
1. 拼配的主題
確定拼配的目標,你希望拼配出什麼樣的味道。
2.瞭解各咖啡豆的特性
要拼配咖啡首先必須熟知每一種單品咖啡的特性,瞭解烘焙程度與咖啡風味之間微妙的關係。
3.確定參與拼配的咖啡豆所擔負的任務
由於是用多種咖啡豆拼配使用,所以必須清楚每種咖啡豆的任務,是要讓它突現柔和的苦味、鮮明的酸味還是厚重的醇度等,這些都需要好好分配。拼配時一般要遵循以下原則:
一.拼配用的原豆要求採用各具特性的咖啡豆,而避免使用風味相似的咖啡豆。選擇原豆可以從三個方面考慮:
1.生豆處理方法:即生豆是採用水洗法處理還是乾燥法處理,處理法與咖啡豆風味有很大的關係。
2.生豆產地:咖啡產地一般分爲三大地區,包括中南美地區,即巴西、哥倫比亞、危地馬拉、墨西哥、窿爾瓦多、牙買加、祕魯等約20個國家;東南亞地區,即印度、印度尼西亞(包括爪哇和蘇門達臘等島嶼)、巴布亞新幾內亞等約10個國家;阿拉伯和非洲地區,即埃塞俄比亞、肯尼亞、坦桑尼亞、阿拉伯、烏干達等約25個國家。
3.咖啡豆的風味:指咖啡豆風味中的酸、苦、甘、醇其中一味比較突出,或各方面比較均衡的中性豆 。現在最常用的原豆是巴西、哥倫比亞和摩卡。 二.參與拼配咖啡豆種類的數量和比例
既然是拼配,自然是指兩種以上的原豆拼配,但一種特殊的例子是也可以把不同烘焙程度的同種咖啡豆拼配在一起,甚至可以把同種咖啡豆的new crop與aged coffee或old crop拼配在一起,所以在拼配中所指的種類已經不單單是咖啡品種,而是延伸到了咖啡的風味。拼配時一般採用2~6種咖啡豆,過多的種類會無法表現咖啡獨特的風味。拼配咖啡一般不採取1:1的拼配比例,因爲這樣可能會互相抑制對方特有的風味,所以拼配時要有主次之分才能拼配出比單品咖啡更美妙的味道。
拼配咖啡最重要的是不斷地嘗試,所以拼配前應該採用數學上組合的方式擬訂一個拼配計劃表,然後通過拼配品杯的過程來確定最佳方案。不要以爲這是一種消極的笨辦法,事實上只有靠拼配師的經驗、靈感和如此不厭其煩的嘗試才能拼配出一杯好咖啡。
