“我也好想開一家屬於自己的小店啊!”“真羨慕你有屬於自己的咖啡館!”這些話是我開店兩年半時間內聽到最多的。但如果做不到以下這7條，千萬千萬不要輕易開店：</p>
<p>
1、對開店所經營的東西非常熱愛</p>
<p>
注意，我用的是“熱愛”，而不是普通的“喜愛”。因爲開店面臨的是很多挫折和繁瑣的事情，如果不是對某樣事物樂此不疲、執着熱愛，是不可能堅持下去的。而且不管你經營什麼，只有你熱愛了纔會去鑽研，只有你鑽研了才懂，只有你懂了才能賺錢。</p>
<p>
如果你財大氣粗地跟我說“我開店不是爲了賺錢，純粹是因爲喜歡，哪怕賠錢我也願意”，請你相信我，當你不斷投入精力在某個事物上卻永遠得不到回報時，你就不會再有這種熱情了。</p>
<p>
2、一顆做事情能夠持之以恆的心</p>
<p>
開店，尤其是開咖啡店，不是像很多人想象中的那樣，做個咖啡店的老闆，就可以捧着一杯香濃的咖啡往窗邊一坐，上上網、看看書、跟朋友們聊聊天，開店意味着從人員管理到物料管理，甚至到油鹽醬醋雞毛蒜皮的小事都可能要你去親自處理，除非你已經做成了一個企業，有成熟的管理模式和可靠的管理人才，所以，如果沒有一顆“持之以恆”的心，你還是多光顧光顧你喜歡的咖啡館，支持支持人家的生意好了。</p>
<p>
3、打了水漂也不會心疼地投入資金</p>
<p>
誰都希望自己的店是一個爲自己賺銀子的聚寶盆，但是這種可能性並不是百分百的。</p>
<p>
100個人裏有10個人喜歡咖啡，其中5個人想開咖啡館，1個人成功了。雖然這句話所說的數字只是一個泛泛的數據，但是足以說明能夠讓店賺錢，尤其是咖啡館賺錢實屬一件不易的事情。在你投資的時候，你要清楚地明白，扔進去的錢有可能打了水漂。如果打了水漂你也無所謂，不心疼，再決定開店。</p>
<p>
另外，除了最初投入的資金，你還需要有個止損的額度。比如說，投資一個店，從房租、裝修等，也許還包括轉讓費，一共需要100萬元，而等你需要再交房租時，之間還需要產生很多成本，比如進貨、人員工資、維護成本，這期間你若還未達到盈利點，還需要再投入，那麼當你投到多少爲止，是再投入100萬還是再投入10萬時，你需要及時止損，停止再投入，考慮轉讓或退出。這個意思跟買股票很像。</p>
<p>
4、“好漢不搭幫”</p>
<p>
看了太多的例子，幾個好朋友甚至死黨，大家都想開店，然後一拍大腿，你湊一萬我湊八千，合着夥開起一家店。起初是你好我也好，但日子長了，就算是親戚都難免有分歧，何況只是朋友。最後鬧得雞飛狗跳，分道揚鑣，老死不相往來的不勝枚舉。所以說，能自己開店的儘量別用朋友的錢。</p>
<p>
5、有面對刁鑽路人甲的良好心態</p>
<p>
可能來咖啡館的客人基本上都是素質較高的，比起小飯館、小餐廳要好得多，但是你必須仍然抱有一顆面對刁鑽路人甲的良好心態。因爲俗話說“林子大了什麼鳥都有”，即使99%的客人都是高素質的人，那也有1%的人可能會有各種理由來刁難你。當然除了客人還有可能你店面周圍的鄰居也有可能爲難你。但是不管怎樣，“和氣生財”這句老話是沒錯的，即使對方打了你的左臉，雖然不必伸出右臉讓他去打，但至少也要學會笑着說抱歉，先從自己身上找原因。即使你沒有任何錯誤，也不能跟客人狡辯。</p>
<p>
我們遇到過在忙得不可開交的時候幫我們爲其他客人端茶遞水的客人，萍水相逢卻不惜花費自己的時間和精力留下他們畫作的客人，看到衛生間馬桶堵了主動幫我們處理的客人，甚至是其他客人把大便拉到馬桶圈上(創業網:www.Cyone.com.cn/)，而主動幫我們打掃的客人;但同時我們也遇到過喝酒鬧事的客人，大聲喧譁影響其他人的客人，甚至還有把便便蹭到洗手間牆面上的客人……總之，你可能會有各種“奇遇”，但是你必須隨時擁有良好心態，才能應付種種奇葩。</p>
<p>
6、還有另一種平常心</p>
<p>
咖啡興起不過短短二十年，在國人眼裏，咖啡館是可以一杯咖啡坐到天黑的地方。有人抱怨說國內咖啡太貴，這也是我們在開店之前總是抱怨的。</p>
<p>
就比如星記，從1998年進入中國市場至今，一杯咖啡動輒就是三十幾塊錢，而在其他國家，星記咖啡的價格僅僅是國內的一半。比如在馬來西亞，一杯卡布奇諾的價格僅僅是8馬幣，即使兌換成人民幣也只需要十幾塊錢。</p>
<p>
而在多年經營之後，我們才理解，不僅僅是中國的房價，中國人對咖啡的消費理念，導致瞭如今中國咖啡價格居高不下的結果。</p>
<p>
我們遇到過這樣的客人，3個大老闆模樣的人走進來向吧員點了三杯最便宜的咖啡(我們一杯美式的價格是20元，卡布奇諾小杯22元)，說坐一會就走，然後一待就是10個小時，如果是不開店的人讀到這裏覺得沒有什麼問題，那麼請聽我繼續說完。後來他們第4個朋友來了，在這第4個朋友進門之前，那3位客人把喝剩的咖啡兌成了一杯“新”的咖啡，然後對那位後來的朋友說“這杯是幫你點的，你來太晚了，已經涼了”，如果這會你覺得已經夠奇葩了，那麼就請繼續聽我說完，10個小時內，這四位聊的都是上億的房地產買賣。就這樣，四位“上億身家”的大老闆在我這裏聊了10個小時，一共消費了60元。</p>
<p>
試想一下，假如說你的店有100平米，除了操作間的面積，客座面積能坐40個客人，而這40個客人都像這幾位大老闆一樣10個小時消費60元，那麼你每天的流水只能拿到200多塊。要知道，在北京，很難找到3元/天/平米以下的店面，而100平米的店面一天的租金至少要300元，這估計還是六環以外的店面價格，還不包括你的水電、人工、材料等成本。</p>
<p>
我們有位朋友的咖啡館還遇到過這種客人：一杯10元的布丁坐一天，蹭網蹭電源不說，還外帶食品。還有一次，有個姑娘跟她點了一杯單份的咖啡，單份是15元，雙份是18元，她用了一上午喝完這杯，準備再點一份的時候問老闆娘“是不是能跟上一杯加起來算18元”。她家的面積本來就不大，但是遇到這種客人又不好說什麼。這樣就直接影響了翻檯率和流水。</p>
<p>
如果你在國內開咖啡店，你有可能會天天面對這樣的煩惱。所以你還要有另一種平常心。</p>
<p>
7、喜歡做菜和開餐廳完全不是一碼事</p>
<p>
認識很多朋友，都是從喜歡喫到喜歡做到開店再到最後關店。要知道，你喜歡平時做做咖啡、做做菜、做做甜點，到真正自己開店，完全不是一碼事。</p>
<p>
喜歡做，是給自己做，心情好的時候，磨磨咖啡豆、打打奶沫、炒炒菜、烤烤蛋糕，然後拍照，發到微博、朋友圈，秀秀小資生活。而開店，無論你心情好壞你都要做，而且還不能由着自己性子來。</p>
<p>
有個朋友拍照技術了得，再加上生了娃以後全職在家，每天都曬一些自己做的小甜品、一日三餐在網上，餐具和菜都擺放得美美的，她跟我說特別想開一家自己的小餐館，就賣自己擅長做的這些小食。我說：“你如果受不了每天煙熏火燎，不停地給客人重複做那幾樣菜，弄得每天身上油煙子味，根本沒時間拍照發朋友圈，那你趁早打住。”</p>
<p>
能想到的就這些，我相信，這些就足以打消一部分人開店念頭了。其實真正開店所要面臨的問題比我羅列得要多得多。請各位看官好自爲之吧!</p>
