<p>
	　　2月3日，全國政協委員、天津狗不理集團董事長張彥森告訴《財經國家週刊》記者，經營咖啡是企業多元化發展的需要，並且可以用獲得的利潤反哺&quot;老字號&quot;的發展。</p>
<p>
	　　對於外界擔心跨界經營的風險，張彥森表示，狗不理投資洋咖啡，並非用狗不理的模式直接經營咖啡，高樂雅咖啡在中國實際經營過程中，完全獨立運作。但業內人士也擔心，作爲後進者，狗不理能否在星巴克、車庫咖啡等國內外咖啡企業的夾縫中生存，還有待時間考驗。</p>
<p>
	<strong>　　佈局</strong></p>
<p>
	　　56歲的張彥森，身材微胖，聲音洪亮。多年前的一次出國交流考察中，他發現了咖啡的商機。張彥森認爲，國外的一些普通咖啡品牌，在國內卻被捧爲高端品牌，主要是由於進口咖啡豆抬高了成本。這讓他有了經營咖啡的想法。</p>
<p>
	　　2012年底，狗不理與高樂雅咖啡國際有限公司進行了初步接觸。此後，經過了將近兩年的艱苦談判，期間，往返10餘次，5次中斷談判，終於在2014年聖誕節簽署了知識產權許可協議，狗不理成爲高樂雅在中國唯一永久的品牌使用者。</p>
<p>
	　　據悉，高樂雅的母公司RetailFoodGroup已與狗不理旗下子公司天津森永泰餐飲有限公司達成合作協議，雙方成立合資公司，中方將持有80%的股權，外方持有餘下的20%股權，狗不理向外方支付的特許經營費爲600萬澳元(摺合人民幣3063萬元)已全部到賬。</p>
<p>
	　　創始於1979年的高樂雅咖啡，經過30多年發展，目前已成爲澳大利亞最大的專業咖啡零售企業，1000多家門店分佈全球42個國家和地區。在中國，高樂雅咖啡也已成功經營10多家店，分佈在上海、天津等地。</p>
<p>
	　　2015年，高樂雅將計劃在國內多開設20家連鎖店。未來，高樂雅在中國的拓展將採取商業合作和連鎖經營的方式，預計今後5年在中國的連鎖店突破200家。</p>
<p>
	　　&quot;今年5月之前，我們還會和澳大利亞的一個麪包連鎖店合作，希望進一步與咖啡融合。&quot;張彥森說，今年下半年，他們有望在北京開一家大型旗艦店。</p>
<p>
	　　值得一提的是，高樂雅咖啡未來計劃不是走加盟店的形式，而是緊密與知名書店、銀行合作，通過平臺精準人羣細分來助推咖啡店的擴張。</p>
<p>
	<strong>　　挑戰</strong></p>
<p>
	　　但狗不理的咖啡之旅並非坦途。國內咖啡市場競爭早已白熱化。星巴克、Costa咖啡、西雅圖、埃爾咖啡等國際品牌紛紛跑馬圈地，雕刻時光、車庫咖啡等本土品牌也勢頭強勁。</p>
<p>
	　　營銷專家李志起對《財經國家週刊》記者表示，在中國真正賺錢的咖啡品牌門店並不多，尤其是走高大上路線的咖啡店。狗不理以前賣包子，現在賣咖啡，兩塊業務的產業鏈截然不同，因此狗不理運作咖啡挑戰很大。</p>
<p>
	　　張彥森似乎並不在意外界的說法。他表示，不管大家喜不喜歡咖啡，咖啡產業都將是未來發展速度最快的產業之一。咖啡廳的人工費用投入小，相比餐館，成本更低。同時，咖啡店不受營業面積大小的影響，租金壓力相對較小。</p>
<p>
	　　公開資料顯示，中國咖啡消費市場每年市場增長速度爲15%左右，遠高於國際市場每年2%的增長速度。2012年中國的咖啡消費大約爲700億元，未來5年中國的咖啡消費將突破1500億元。</p>
<p>
	　　&quot;因爲我們走的是高品質路線，定位基本是在一二線城市，不同於一些咖啡品牌的流水線操作，我們追求的是個性化的高品質。&quot;張彥森認爲，高樂雅咖啡會根據消費者的不同需求和喜好，手工生產&quot;你喜歡的咖啡&quot;。</p>
<p>
	　　中西文化的融合也是高樂雅咖啡的一大特色。在張彥森看來，他們要潛移默化地將中國文化更好地融入咖啡文化。譬如咖啡廳作爲第三空間，爲消費者提供消費場所，就要融入中國文化，將其打造成具有中國元素更加溫馨的與衆不同的咖啡廳。</p>
<p>
	　　中國烹飪協會常務副會長兼祕書長馮恩援向《財經國家週刊》記者表示，狗不理作爲大型企業集團，選擇新的業態也是大膽的舉措，一個企業可以有多種業態，包子和咖啡業務並不矛盾，因爲雙方是獨立運作，一切都要看市場的需求。</p>
<p>
	　　當然，咖啡戰略只是張彥森打造狗不理多元化的一部分。2014年，在餐飲行業整體增長放緩這一新常態背景下，狗不理新開張了4家門店，2015年將有4家新店開業。此外，張彥森還打算拓展新加坡和美國市場。</p>
<p>
	　　更具想象空間的是，2015年，狗不理將與歐美食品行業巨頭開展重大合作，共同開發以速凍食品爲主導的國內外市場。目前，雙方已完成2輪商務談判，並達成初步合作意向，具體合作方案預計將在今年3月底前交雙方董事會討論通過。</p>

	　　&quot;隨着中國國際地位的不斷提升，像狗不理這樣走出去投資、引進來合作的企業會越來越多。狗不理賣好包子很重要，能夠與時俱進發展、做強做久更重要。&quot;張彥森說。</p>
