但合作社是什麼？如何運作？以及農民如何在一起工作時，生產出可追溯來源的單品咖啡？</div>

爲了探討這個問題，作者訪談了巴西Minasul合作社的總裁José Marcos Rafael Magalh?es，這個合作社擁有6000個成員，範圍涵蓋了巴西Minas Gerais省六個產區中的四個產區，這是世界上最具規模的合作社。事實上，這邊產出的咖啡甚至比越南全國的產量還高，而越南可是世界上排名產量前幾名的國家，這樣的產量非同小可。</div>

本文讓我們看合作社如何運作，以及如何適應精品咖啡的供應鏈運作模式。</div>

什麼是咖啡合作社？</div>
<div>
</div>
<div>
如其名，咖啡合作社是由許多咖啡農組成的合作團體，以獲得更好的資源，諸如更好的行銷資源、做生意的機會、人員培訓資源等。</div>
<div>
</div>
<div>
所有加入合作社的成員都需要繳交社費，然後再用這筆錢投入當地社區，集資後的款項比單獨使用會來得更有效益。此外，許多大型合作社都有全職員工，工作範圍涵蓋管理、行銷、人事教育、研究等。</div>
<div>
</div>
<div>
表示：「合作社是非營利組織，所有人都是自願參與，而我們的工作就是讓會員們在生產或供應咖啡時可以更方便取得資源。」</div>
<div>
</div>
<div>
「供應鏈並不是只有施肥、噴農藥，而是包含現金流動、資訊整合、科技運用等，我們必須提供農民資源、知識，並讓農民可以將咖啡銷出去。」</div>
<div>
</div>
<div>
合作社給了農民什麼？</div>
<div>
</div>
<div>
讓我們來看「提供生產資訊」對農民帶來什麼幫助。Andreia Nogueira Foresti已是合作社成員35年的時間，同時是巴西Fazenda do Lobo農園的主人，這個農園約是中等規模。</div>
<div>
</div>
<div>
他表示：「這個合作社的目的，是將會員的產品和服務推廣到市場上，比我們自己來賣更有利的條件，他們也爲我們提供服務。例如，合作社有一個團隊組成的技術部門、農業部門，以及農產品保存團隊。有一家銀行爲我們提供更好的信貸利率，讓我們可以融資來種咖啡。在這裏我們得到了全面的支持。」</div>

事實上，合作社業務範圍可能很廣，包含但不受限於以下項目：</div>

供應農民農藥與肥料</div>

不同的農園有不同需求</div>

合作社可能會發現不同的農民會員有不一樣的生產模式，而合作社必須將這個部分納入對農民的規劃中。</div>
<div>
</div>
<div>
說：「合作社希望能共跟農民貼身做事，瞭解他們的期望。我們透過研究將他們從小規模，一路做到中、到大規模。每個人都很重要但卻有不同的需求，所以我們試着去迎合每種需求。」</div>
<div>
</div>
<div>
「大型生產者可能需要30萬美金的採收機器，而小型生產者可能只需要300美金的m?ozinha採收器具（這是一種手持的器具，透過震動咖啡樹將枝條上鬆動與成熟的果實震落）。而這是合作社的責任，確保每個人的需求都可以被滿足。」</div>

「然而不僅是規模大小這麼簡單而已，生產者可能因爲農園氣候而有不同需求。農民會需要針對咖啡採收與管理做一系列的教育訓練，或是對農民的子女進行教育。而這些需求非常多又非常不同。」</div>

<div>
爲什麼不獨立作業就好？</div>
<div>
</div>
<div>
當然咖啡生產者未必要加入合作社，他們也可以獨立作業，獨自跟貿易商、出口商洽談，獨自進行認證等。然而這當中有許多作業流程，從銷售、中介商、與買家直接貿易等。那麼，農民有什麼要顧慮的細節？</div>
<div>
</div>
<div>
首先，不是所有生產者都有能力與資源來獨立作業，較小規模的農民可能產量不足以跟出口商或烘豆師直接對接，導致他們被迫將精品等級的咖啡銷售到期貨市場。可能還缺乏行銷與社羣宣傳的資源，更不用說花時間跟潛在顧客洽談生意、或是到國外參加咖啡展了。</div>

<div>
另一方面，生產者可能希望跟其他農民有特色上的區隔，或發展一套直接貿易的合作關係，特別需要留意的是，每個合作社對於這部分的處理能力也有差距。以本文訪談的Minasul合作社來說，他們會連結生產者與優質烘豆商，這樣他們就可以進行直接貿易並用很好的技術呈現咖啡。這樣的方式可以讓咖啡的可追溯性被保留。然而較小規模的合作社，農民所產出的咖啡可能一起被處理並被販售，這樣的合作社注重的就是羣體而非個人需求。</div>

另一個要注意的是邊際效應，前面提到合作社是非營利組織，關注的農民個人，重視生產者的發展，這代表如果合作社要運轉的好，根本還是要回到農民做得好這件事上。</div>
<div>
</div>
<div>
這也是爲什麼合作社常銷售肥料給農民，讓他們降低成本，並提供低利率信貸等。合作社也大可以將農產品大量收購併賣出，但這樣農民只會陷入還債而非獲利的處境。</div>
<div>
</div>
<div>
然而其他的組織，可能還有股東這樣的利害關係人去分潤。由於獨立作業的農民常常規模比合作社更小，所以這些農民種植的成本會較高。因爲成本負擔不只是材料支出（毛利率），還有包含管銷費用。</div>
<div>
</div>
<div>
當然不是所有的合作社都對成員那麼好，但通常來說，咖啡合作社就如其名：生產者合作，以改善咖啡品質、強化自己在供應鏈的優勢地位。</div>
<div>
</div>
<div>
咖啡種植是一個極具挑戰的行業，隨着全球暖化與咖啡價格的波動，讓這件事從來都不簡單。合作社致力於提供成員幫助、克服難關、建造基礎建設、教育訓練與財務規劃、與出口商與烘豆師牽成直接貿易的線等等。</div>
