一面幼嫩的阿Kim剛染了一頭金髮,就在少少一間咖啡室裏做着謙卑的衝咖啡工作,誰又會聯想到他就是曾經擊敗一衆國際高手的世界拉花冠軍呢?其實阿Kim三年前纔開始學咖啡,從一張白紙開始,一年之後已經成爲香港拉花大賽冠軍,就因爲一分熱誠和專注。他說:「其實做啡咖師不需要天才,只要多點思巧,誰都可以做專家。」</div>

倒花與畫花之別</div>

阿Kim指咖啡拉花有兩種,一種叫「畫花」(drawing),一種叫「直接倒入法」(pouring),他用來比賽的拉花是後者,叫free pouring,只是將牛奶直接倒入咖啡而已。他說:「外間有不少咖啡拉花的圖案,看似超級多變化,其實不少都是畫出來的,即是在倒入牛奶泡後再挑出圖案,有點像畫畫,只不過顏料變了牛奶而已,而我選擇直接倒入法,是因爲專業性更強,亦是我個人專注的選擇。」畫花不是阿Kim那杯茶,他甚至認爲拉花不過是用來錦上添花,在咖啡世界中,拉花只不過是很少很少的一部分,真正重要的其實是那杯好咖啡!</div>

國際拉花冠軍之旅</div>

在2012年紐約國際拉花比賽(New York Coffee Fest World Latte Art Champion)中,阿Kim是以一對一形式對決的,二人各自用大會給予的機器,在3分鐘內,拉出最滿意的拉花咖啡,然後給評判裁決,評審們只看圖案,不試味道,由此將64位國際高手淘汰剩下32人,再而是16強、8強、4強、2強,阿Kim過五關斬六將,最後贏得世界冠軍,成爲第一個贏取這獎項的華人。</div>

不過,拉花比賽亦有多種不同形式,不同的比賽規則,他說:「例如在WLAC比賽(World Latte Art Championship),我需要在8分鐘之內,衝6杯咖啡,分爲3對,分別模仿3個不同圖案,其中咖啡衝調技巧亦會計算在內,佔一定技術分數,不過縱觀大部分的拉花比賽,大都會把注意力集中於圖案上,評分標準包括:難度、工整度和對比度等。」</div>

工整、對比、平衡與高難度</div>

至於如何才能取得評判的讚賞,他說:「其實很多人都不知道拉花圖案的好壞之別,那其實包括:工整度、對比度、左右平衡和難度。拉花圖案的對比強烈,咖色(咖啡)和白色(奶)之間要黑白分明,看起來便會更靚。有時拉花的白色部分會太貼近杯邊,缺少了啡色外圈,圖案便會變得模糊。此外,就是平衡,即是花紋的左右兩邊是否對稱,那就考你搖壼的手法是否力度平均,角度一致。第三,就是難度,隨着咖啡文化的發展,拉花圖案只會愈做愈複雜,很難有一致標準,因爲評判們已經見過很多圖案,曾經新穎的也會很快過時,而我的個人角度是,線條比較多,會令人覺得難度更高。而杯子愈細,拉花的難度亦愈高,因爲可以走位的空間更少。」</div>

咖啡爲本 拉花爲次</div>

阿Kim認爲,「咖啡首先是用來飲的,拉花只是爲咖啡增值,同一樣的咖啡可以加入不同圖案,但首先那杯咖啡必需本身好味,如果你純粹爲了做靚個圖案,而不理咖啡味道,便是不正確的態度,雖然很多拉花比賽都沒有把咖啡味道計算在內,但卻不等於你的咖啡味道不重要,那是態度問題。」看來如果阿Kim做拉花評判(他其實已有少來自臺灣和國內的邀請),他一定會忍不住嘗一嘗,比比分呢!</div>

儘管每一位咖啡師都有自己的標準,而對阿Kim來說,「我的首要標準是要令客人覺得舒服,如客人覺得沒有拉花圖案的咖啡更舒服,我可以不做。但當然,我也有自己的底線,例如不能加太多糖,因爲太多糖會影響味蕾,到頭來無論任何咖啡都沒有分別!」</div>

不過阿Yim自言不會隨便教人,因爲他要的是認真的學生,不想玩玩下心態,「現在很多人家中有咖啡機,而我開班教人的目標是,要令他們在家中能真的衝出一杯嫩滑美麗的好咖啡,學習到正確的打奶技巧和拉花動作。」</div>

其實阿Kim不但在香港打工,也同時與5位香港年青咖啡師在臺北開了一間地方寬敞、寧靜,充滿文化氣色和藝術作品的咖啡吧Artista Perfetto,把藝術和咖啡來個絲絲入扣,在香港辦不到的,臺灣的文化氣息卻可以容得下這6位來自香港的咖啡少年。</div>
