咖啡打奶泡技巧奶泡應該怎麼打？拉花爲什麼會消泡？

好不容易能把奶泡打出來了，但是怎麼樣去判斷這杯奶泡打發的情況呢？

什麼樣的奶泡纔算是合格的呢？小編認爲就是表面光滑無粗泡且具有流動性。

打發出的奶泡越細膩，則單個奶泡中所含空氣越少，密度高，浮力小；打發出的奶泡越粗糙，則單個奶泡中所含空氣越少，密度低，浮力大。如果打發出的奶泡較爲粗糙，奶泡會快速浮於牛奶表面，融合度較低；如果打發出的奶泡較爲細膩，奶泡浮於牛奶表面的速度會緩慢，融合度較高。

有時候在拉花的時候會有一種很尷尬的情況出現，那就是晃奶缸的時候覺得，嗯這奶泡打得很好啊！夠光滑也不薄！結果一倒到咖啡裏融合的時候就蒙了，看起來像是沒有泡一樣，很水；但是到了拉花做圖案的時候就是一大坨泡“pia 嘰”的一下掉杯子裏了……

其實這種情況出現的原因有兩種：1、牛奶和奶泡融合度不夠，2、牛奶跟奶泡根本沒有融合而導致的分層。

牛奶和奶泡的融合度？

奶泡與牛奶的融合度指的是打發奶泡後奶泡與牛奶兩者結合的緊密程度。

如何判斷牛奶奶泡的融合度？

原理：剛打發好的奶泡，奶泡與牛奶兩者是融合在一起的，需要靜置一段時間，奶泡和牛奶纔會分離開形成分層，而靜置時間的長短則代表着打發出奶泡與牛奶融合度的高低。

方法：將打發好的奶泡倒入透明的玻璃杯中，靜置。如靜置30秒內，奶泡與牛奶出現明顯的分層，融合度則爲低等；如靜置30秒以上，60秒以內，出現明顯的分層，融合度則爲中等；如靜置60秒以上，出現明顯的分層，融合度則爲高等。

牛奶奶泡分層了怎麼辦？

1、將裝有奶泡的拉花缸放垂直與檯面進行碰撞，這樣會使大的奶泡破滅成小的奶泡，大奶泡都破滅之後，水平搖晃拉花缸，讓奶泡旋轉碰撞，也會消除掉一些大奶泡，綿密的奶泡就像鏡面一樣很光滑，有光澤。

2、使用勺子將奶泡上面一層大奶泡刮掉，留下下面的綿密奶泡。但其實並不建議大家養成刮奶泡的習慣，刮奶泡是種補救行爲，在打奶泡過程中控制噴孔埋入牛奶液麪的深度不良，可能會產生過多粗奶泡，敲桌面又不能讓它們全部自然破掉，那就只好刮掉了。

3、將裝有奶泡的拉花缸倒入另外一個拉花缸。

爲什麼有時候咖啡拉花的奶泡會散的比較快？

影響因素有幾種：

1、牛奶

其實並不是用什麼牛奶都能夠得到一杯綿密細膩的奶泡的呢。脂質含量較多的牛奶可能比較容易形成較穩定的奶泡，乳脂是牛奶中主要的脂肪，建議使用脂肪含量在3.2-3.8%的全脂牛奶。

2、奶泡粗細

如果打發的奶泡粗了，奶泡也是會消得比較快的。

3、溫度

牛奶發泡最理想的溫度介於55-60℃，若低於這個溫度，可能會得到不穩定的奶泡及大氣泡；若高於這個溫度，則會讓過多蛋白質變性。溫度過高的殺菌處理，或加熱過度都會讓牛奶味道改變，除了會產生硫磺味外，也會導致發泡失敗。
