而Chad今天準備的是236 巴拿馬的Geisha(藝伎),雖說這個豆已經是非常厲害的咖啡豆,但我也不是第一次喝Geisha沖泡的咖啡,在經Chad的手所沖泡而成的咖啡,帶給我的口感饗宴真的是驚豔、豐富我的味覺、口感。</div>

爲什麼選擇的是236巴拿馬的Geisha?Chad說:這個就是他拿下世界冠軍使用的咖啡豆。今天他就是要儘量重現比賽當天的風味給我們品嚐!</div>

第一步,就是先研磨咖啡豆,而磨完的豆子,即便跟我的距離約有1米半,也能清楚地聞到濃郁的類似柑橘果香,在Chad手上不停地翻攪下,又帶出了桃李類水果的香氣,這是因爲翻攪的過程因爲跟空氣接觸(二氧化碳)所產生的變化,如果再繼續翻攪下去,就會呈現巧克力的風味。</div>

然後沖泡使用的是錐型濾杯,這種濾杯其實是用旋繞式沖泡,但他這次是用中心式沖泡,因爲他這次要一次衝煮3份,使用爲了避免咖啡粉被注水時翻擾使用選擇中心式沖泡。</div>

第一次沖泡咖啡時準備的是92度水溫,1分30秒到2分鐘的的沖泡時間是Chad一貫的沖泡時間,而他也表示沖泡的時間其實是跟研磨的程度有關係。剛泡完時是適合體會它的香氣,等咖啡溫度降到約70度後再開始品嚐,而咖啡本身也會隨著溫度的改變產生香氣與味道的變化。</div>

我在啐飲第一口後,口中很明顯地感受到的是帶著桃子香氣的酸味感受,但事實上卻一點也不酸,卻也刺激是口中分泌口水!</div>

而在桃子的酸味感受後帶來的又是黑巧克力的口感,卻不帶苦澀,嘴裏滿滿的都是巧克力風味(這個時候突然有種很類似喝紅酒的口感,咖啡喝起來絲柔滑順,然後帶著果香風味),飲完後吞嚥口水,口中依舊滿是果香、花香口感。</div>

第一階段的品嚐也在Chad分享他參加世界比賽中告一個段落,然後Chad也著手準備第二次的沖泡。</div>

第二階段的沖泡,還是一樣的豆,但在感受上明顯變的濃郁及更豐富的香氣,Chad表示是因爲在水溫上做了改變(88度)所以第二杯的咖啡口感是比較厚、比較甜、比較有花香!</div>

至於改變溫度會影響什麼?</div>

會影響的是流速,比較低的溫度,水會變得比較重,但同樣的咖啡在2次的沖泡下,因爲溫度的調整,所帶出來的口感與香氣也有明顯差異,這也太令人驚奇(這部分一定是我太少喝到大師級的咖啡!)</div>

第二杯啐飲下第一口跟第一杯一樣,馬上反應出酸的味道,然後中間再喝,巧克力的味道已經散佈在口中,然後喝完的口腔是瀰漫著巧克力的香味,即便在冷掉後的常溫依舊保有相同的香氣,並沒有帶出其他反感的味道!</div>
