濃縮咖啡(Espresso)上有一層厚厚的<a href="http://www.gafei.com/yishikafei/20180314116269.html">油脂(Crema)</a>,能夠產生足夠的表面張力,托起由微小氣泡所組成的奶泡。藉由奶泡和油脂的排列,就可以做出各式各樣的圖案,所以拉花成功與否的關鍵,除了咖啡師的技術,奶泡及<a href="http://www.gafei.com/yishikafei/20180314116269.html">咖啡油脂</a>也是很重要的因素。拉花成功的先決條件就是基底有足夠的表面張力,所以其實不只咖啡可以製作拉花,一般的水也是有可能成功的。不過差別就是好不好喝(或能不能喝),以及能不能做出漂亮的圖案。</div>

拉花的形成</div>

簡單來說要製作一杯好的拉花的拿鐵:高質量的espresso和綿密的奶泡是不可或缺的。咖啡豆在高溫高壓下會乳化咖啡粉的不可溶性油脂,同時大量的二氧化碳會被溶解到液體裏。這時候爲了穩定這些小氣泡,咖啡通過“蛋白黑素”使得這些氣泡變得有穩定且有彈性。這就是我們常說的Crema。另一個重要的關鍵就是奶泡的形成,牛奶和奶泡的差別在於在奶泡打發過程中由於蒸汽的加入使得乳蛋白在表面張力作用下形成了很多綿密的細小的泡沫,高脂肪使奶泡的結構更加穩定和持久。</div>

咖啡表層<a href="http://www.gafei.com/yishikafei/20180314116269.html">咖啡油脂</a>泡沫的顏色,會影響拉花的黑白分明度;油脂泡沫組織的細緻度,則會影響拉花圖案的光亮度;若咖啡豆的本體偏酸,容易破壞奶泡結構。</div>

一般拉花咖啡的基底都是濃縮咖啡,因爲濃縮上的一層厚厚油脂,能夠產生足夠的表面張力,托起由微小氣泡所組成的奶泡。</div>

●“牛奶藝術(latte art)” 從這名字就不難看出,奶對於拉花的重要性。</div>

將牛奶倒入拉花缸中,牛奶變成奶泡時體積會膨脹而溢出來,因此牛奶不能太多,通常會將牛奶倒至V字形杯嘴的最下端。</div>

咖啡拉花一定要用全脂牛奶,而且控制溫度在攝氏60至70度,打奶時奶缸與噴頭最好成45度角,打出來的奶泡要細膩圓滑,不能有大的奶泡。</div>

爲什麼牛奶不能過度加熱?因爲牛奶加熱到85度以上後,牛奶中的蛋白質和脂肪開始被分解破壞,牛奶會開始還原呈現白水狀。拉花用奶泡要求綿細無大泡,牛奶都成水狀了。。。不僅拉不出好看的花不說,還會影響咖啡整體口感。</div>

趁著奶泡還未與牛奶分離,將牛奶倒入萃取好的濃縮裏,使咖啡及牛奶充分的結合,倒至杯子6、7分滿時,透過杯子及拉花缸的擺動描繪出你想要的圖形。</div>
